Apple Pie Power Bake: A High-Protein, High-Fiber Breakfast Bake
Apple pie for breakfast, without the pie crust. This apple cinnamon breakfast bake is custardy and warmly spiced, and it’s built around protein and fiber, which helps a morning meal feel more satisfying. Each serving has about 19 g of protein and 10 g of fiber (estimated), from eggs, collagen powder, chia seeds, ground flax, oat bran, and raspberries.
It isn’t very sweet on its own. The honey drizzle at the end makes up for it, along with a spoonful of whole-milk yogurt and a few walnuts on top. It all bakes in one 9x9 dish and makes 9 servings, so it’s an easy high-protein breakfast to make once and eat from during the week.
Serves: 9 | Bake: 25 minutes at 400°F | Cool: 10 minutes
Ingredients
For the apples
5 medium apples, skin on, sliced very thin
3 tbsp butter
4 tbsp coconut sugar
3 tsp ground cinnamon
For the batter
7 large eggs
2 tsp vanilla extract
1 cup A2 whole milk (plus a splash more if the batter is very thick)
8 tbsp chia seeds
1/2 cup ground flaxseed
8 tbsp unflavored Vital Proteins collagen powder
1/2 cup all-purpose organic flour
1/4 cup oat bran
To layer and top
1 cup raspberries, fresh or frozen
1/2 cup whole-milk A2 yogurt (1 to 2 dollops per serving)
1 tbsp honey, for drizzling
1 tbsp walnuts, chopped
Instructions
Heat the oven to 400°F.
In a pan, cook the very thinly sliced apples with the coconut sugar, cinnamon, and butter. Pour them into a 9x9 baking dish.
While the apples cook, whisk together the eggs, vanilla, milk, chia seeds, ground flax, collagen powder, flour, and oat bran until smooth. The batter will be thick, so add a splash more milk if needed.
Spread the cooked apples in the baking dish and scatter the raspberries over them. Pour the batter over the top.
Bake for 25 minutes at 400°F. If the center still jiggles, bake a few minutes longer.
Let it cool for 10 minutes before eating.
Top each serving with 1 to 2 dollops of whole-fat yogurt, drizzle with honey, and finish with chopped walnuts. Voila, your new favorite breakfast bake.
